These bars are a variation of oatmeal scotchies--but faster to make and great to serve when you have a crowd.

1 cup + 2 Tablespoons Butter, softened
2 cups Brown Sugar
2 Eggs
2 tsp Vanilla Extract
2½ cups Flour
1 tsp Salt
1 tsp Baking Soda
3 cups Quaker Oats, uncooked
1× 14 oz can Sweetened Condensed Milk
1× 11 oz bag Butterscotch Morsels
¾ cup Chopped Pecans


Preheat oven to 350 degrees. Spray a 9 x 13 baking dish lightly with nonstick spray and set aside. In a large mixing bowl, cream 1 cup butter and brown sugar. Add eggs and 1 teaspoon vanilla, and then beat until smooth. Combine flour, salt and soda in a bowl. Add dry ingredients to butter mixture and beat only long enough to combine. Stir in oats. Press two thirds of mixture into prepared baking dish using floured fingers. Reserve other third for topping. In a medium saucepan, heat milk, 2 tablespoons butter, 1 teaspoon vanilla and butterscotch chips. Stir until chips are melted. Pour over crust evenly. Sprinkle with nuts, then remaining oat mixture over top. Bake 28-30 minutes until top crust is done. Cool before cutting into small bars.
