Chewy Cran-Oat Bars

The cookie crust contains butter, brown sugar and rolled oats. Some of this is reserved to sprinkle on top of the filling, which has sour cream, raspberry jam, and dried cranberries.
 

Ingredients

  • 1/2 cup butter
  • 1/2 cup brown sugar
  • 1 cup rolled oats
  • 3/4 cup flour + 1 Tablespoon
  • 1 C. dried cranberries (Craisins)
  • 1/2 C. sour cream
  • 2 Tablespoons raspberry jam
  • 1/3 C. sugar
  • 1 egg white
  • 1 T. Vanilla

Method

Preheat oven to 350 degrees. Cream butter and brown sugar in bowl, add the 3/4 cup flour and the oats until blended. Set aside 1/2 cup mixture for the topping. Press remaining dough in a 9x9" baking pan and bake for 10 min., or until lightly browned. Meanwhile, combine craisins, sour cream, sugar, egg white, vanilla, jam and the 1 Tb. flour in bowl. Spread over baked crust. Drop the remaining dough in small teaspoons over filling and bake 20-25 minutes.

 

Notes: I like to use lower-fat butter spread such as I can't Believe It's Not Butter, and fat-free cream cheese.
