Cherry Meringue Squares

The base for these treats is a pineapple cake mix, topped with a cherry-pecan mixture and prepared fluffy white frosting mix.
Ingredients
- 1 10-oz bottle maraschino cherries
- 2 tablespoons sugar
- 1/4 cup water
- 1/4 cup chopped pecans
- 1/2 cup butter
- 1 18-oz box pineapple cake mix
- 1 package (dry) fluffy white frosting mix

Method
In medium saucepan combine cherries, sugar, water, and nuts. Heat over low heat stirring constantly until thickened about five minutes. Set aside to cool. Heat oven to 350 degrees; grease and flour a jelly roll pan (15x10x1-inch). In large bowl cut softened butter into dry cake mix until crumbly; reserve 1/2 cup mixture. Pat remaining into jelly roll pan. Bake 10 to 15 minutes or until lightly browned. Prepare frosting as package directs. Spread the cooled cherry mixture over cake in pan. Cover with frosting. Top with reserved crumbs. Bake about 20 minutes or until topping has begun to brown. Cool and cut into 2-inch squares.
Notes: I adapted this easy recipe years ago from one that my mother had. I like to make it when I know there are going to be kids showing up. I can make these ahead and have treats for all.
