Cherry Limeade Crinkles

These cookies are as delicious as the drink they are named after. They even have little bites of cherries throughout them.
 

Ingredients

  • 1 cup unsalted butter, softened
  • 1 1/4 cups granulated sugar
  • 2 eggs
  • 1/2 cup (from 6 oz. can) frozen limeade concentrate, thawed
  • 3 1/4 cups sifted all-purpose flour
  • 1 teaspoon baking soda
  • 1 cup chopped and drained maraschino cherries
  • 3 tablespoons granulated sugar for rolling cookies

Method

In a large bowl, beat together butter and sugar until fluffy. Beat in eggs and limeade concentrate. In a medium bowl, sift together flour and soda. Gradually beat into first mixture. Stir in cherries. Cover and chill dough for 1-2 hours or overnight. Preheat oven to 375 degrees. Spray a large cookie sheet with non-stick cooking spray. Place remaining sugar in a small bowl. Shape dough into 1 1/2-inch balls. Roll in sugar. Place 2-inches apart on cookie sheet. Bake for 8-10 minutes until golden. Cool for 5 minutes before removing from pan.

 

Notes: Cherry limeades are our favorite warm weather drink so when I created these copycat cookies, they added just the right touch to the first outdoor barbecue of the spring season.

 

Number of Servings: Makes 5-6 dozen.
