Cherry Brownies for My Sweetie

These very moist brownies use cocoa powder, almond extract and amaretto liqueur, plus pureed cherry pie filling that's stirred into the batter.
 

Ingredients

  • 2 sticks (1 cup) butter
  • 2 cups sugar
  • 1 tsp vanilla
  • 1 tsp almond extract
  • 2 tbsp Amaretto liqueur
  • 4 large eggs
  • 3/4 cup cocoa powder
  • 1 cup flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 21 oz can cherry pie filling
 
Method

Preheat oven to 350 degrees. Place butter in a 2-quart microwave-safe glass measuring cup; melt in a microwave, about 1-2 minutes. Add sugar, vanilla, almond extract and Amaretto. Add eggs, one at a time, mixing well by hand after each addition. Combine and add cocoa, flour, baking powder and salt. Mix only until dry ingredients are incorporated. Place cherry pie filling in a blender and process until almost pureed (some cherry chunks are acceptable) then fold into batter. Spray a 9x9" or 13x9" pan with cooking spray. Pour batter into pan and bake about 30-40 minutes or until brownie pulls away from sides and a wooden pick or cake tester comes out clean.

 

Notes: Serving suggestion: Serve warm, topped with vanilla ice cream and some more cherry pie filling.
