Champion Chocolate Cookies

The batter for these chocolate drop cookies contains brown and granulated sugars, butter, cooking oil, a little molasses, unsweetened cocoa powder and toasted coconut, in addition to the usual chocolate chip cookie ingredients.
 

Ingredients

  • 4 oz flaked coconut
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter
  • 1/2 cup (cannola) oil
  • 2 eggs
  • 2 tsp molasses
  • 2 1/3 cups flour
  • 1/4 cup unsweetened cocoa powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 6 oz semisweet chocolate chips
  • 6 oz milk chocolate chips

Method

Toast coconut and set aside to cool. Cream sugars and butter. Add oil, eggs, and molasses; mix well. Stir together dry ingredients and gradually stir into batter. Mix in coconut and chips. Drop on an ungreased cookie sheet and bake at 350 degrees about 12 to 13 minutes.

 

Notes: It is better to bake just a little longer than not long enough. These are best made into small cookies, and do not make the drops too high on the sheet since they do not spread. These are crispy cookies that have a soft center; eat them warm or cooled.
