Cashew Cookies

These cookies should provide a lighter taste and texture than the average peanut butter cookie.
 

Ingredients

  • 2 sticks unsalted butter, at room temperature
  • 1 cup chunky cashew butter (Note: oil may have separated from butter, make sure to stir until an even consistency)
  • 1 teaspoon vanilla extract
  • 1 cup dark brown sugar, packed
  • 1 cup white sugar
  • 3 cups all purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 large eggs
 
Method

Preheat oven to 350 degree. Using an electric mixer, mix butter, cashew butter, and vanilla, then add sugars. Mix flour, baking powder, and salt in a medium bowl. Stir half of dry ingredients into batter. Add eggs, one at a time, making sure to mix after each one. Add rest of dry ingredients. To make cookies, roll medium sized balls of batter in your hands to the the diameter of a quarter. Place balls on a greased or parchment-lined cookie sheet. Use a soup spoon to flatten balls. Cookies should not be more than a 1/4 inch thick. Bake about 15 minutes or until golden brown on bottom. Partially cool cookies on cookie sheet before removing to serving plate, about 5 minutes.
