Cappuccino Cookies

These slice-and-bake refrigerator cookies are made with powdered drink mix. Coconut, almonds and brown sugar are also in the dough.
 

Ingredients

  • 1 3/4 cups flour
  • 1/2 tsp soda
  • 1/4 tsp salt
  • 1 packet (General Foods) Cappuccino Coolers French Vanilla drink mix
  • 1 1/2 cups shredded coconut
  • 1 cup almonds, chopped (for ease, use sliced almonds and chop them)
  • 1/3 cup shortening
  • 1/4 cup [Blue Bonnet] margarine
  • 1 cup dark brown sugar, packed
  • 1 large egg
  • 1/2 tsp vanilla

Method

Combine flour, soda, salt, drink mix, coconut and almonds in medium bowl. Combine shortening, margarine, brown sugar, egg and vanilla in large bowl. Add flour mixture and stir well. Form into 2" roll on wax paper. Wrap and chill at least 30 minutes in freezer, or several hours in refrigerator. Preheat oven to 375 degrees. Slice dough into 1/4" slices. Place on parchment paper-lined cookie sheet, about 1" apart. Bake about 8 minutes or until lightly browned. Cool on cookie sheet about 1 minute, then remove to rack.
