Butterscotch-Chocolate Chip Cookies

This cookie dough uses butter, granulated and brown sugar, and egg, in addition to flour and soda, and contains both chocolate and butterscotch chips.
Ingredients
- 2/3 C Butter
- 1/2 C Granulated sugar
- 1/2 C Light Brown sugar
- 1 Large egg
- 1/2 tsp vanilla
- 1 1/2 C all purpose flour
- 1/2 tsp baking soda
- 4 oz. chocolate chips (2/3 cup)
- 4 oz. butterscotch chips (2/3 cup)

Preheat oven 350 degrees F. In a large mixing bowl, cream together butter, sugars, egg and vanilla with a hand mixer on high speed until smooth. Next combine and stir in dry ingredients; add the chips last. Drop by spoonfuls onto ungreased cookie sheets and bake until lightly brown on the bottom, approximately 8-10 minutes. Let cool on the cookie sheet for a few minutes, and then move to a cooling rack.
Notes: I store these in an airtight container and keep refrigerated until ready to serve.
Number of Servings: about 2 1/2 to 3 dozen
