Butter Cookies

This cookie is great anytime during the year. It is great for Christmas Teas and mother daughter teas, or for any occasion.
Ingredients
- 1 cup butter, softened
- 1 1/2 cups confectioner sugar
- 2 egg whites
- 1 tsp vanilla
- 2 1/2 cups all purpose flour
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- Sugar, for rolling

Method
In a mixing bowl, cream the butter and confectioner sugar. Beat in egg whites and vanilla. Combine flour, baking powder and baking soda, gradually add to the creamed mixture. Roll into 1-1/2 inch balls, then roll in sugar. Place 2 inches apart on greased baking sheets. Flatten with a fork. Bake at 350 degrees for 12-14 minutes or until edges are lightly browned. Cool on wire racks.
