Brownies with Butter Rum Frosting

Rich chocolate brownies, topped with a cream cheese and butter rum frosting.
 

Ingredients

  • 1 1/4 cups butter
  • 1 ounce baking chocolate
  • 1/2 cup cocoa
  • 4 eggs
  • 2 cups sugar
  • 2 teaspoons vanilla
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 1/2 cups chocolate chips
  • 1/2 cup butter, softened
  • 1/2 cup cream cheese, softened
  • 3/4 pound confectioner's sugar
  • 2 Tablespoons butter rum syrup (such as Torani)

Method

Heat oven to 350 degrees. Lightly grease a 10 x 15 jelly roll pan. Melt 1 1/4 cups butter in a small saucepan; when melted add baking chocolate and stir until melted. Remove from heat and stir in cocoa. In a large mixing bowl, beat the eggs until fluffy; gradually beat in sugar until mixture is quite thick. Stir in the chocolate mixture and vanilla. Put flour and salt in a small bowl together and mix with a whisk until light and fluffy (as if it were sifted), and thoroughly mixed. Fold the flour mixture into the chocolate mixture and mix until well-blended. Stir in chocolate chips. Spread the batter evenly in the prepared jelly roll pan, and bake twenty minutes or until firm to the touch. Cream together softened butter and cream cheese, then blend in half of the sugar. Add the remaining sugar alternating with the butter rum syrup until the frosting is of spreading consistency. When the brownies are completely cooled, spread with the frosting and cut into bars.

 

Notes: Use any type of chocolate pieces in place of chocolate chips. You may substitute 4 Tablespoons light rum for the butter rum syrup.
