Brownie Bites

Just make thin brownies, fill with ice cream and cover with chocolate for a great snack that will last for a while (maybe).Ingredients
- 1 box brownie mix (and ingredients needed according to package directions)
- 8 oz semisweet chocolate chips
- 1 cup heavy cream
- 1 pint of your favorite ice cream (I like mint chcocolate chip for this one)

Preheat oven to 375. Mix the brownies according to package directions. Spray a cookie sheet (we want thin brownies) with cooking spray. Pour the brownie mix into the pan and bake at 375 degrees until a toothpick comes out clean, about 15-20 minutes. Once the brownies are out, allow them to cool completely. Place the semisweet chips into a bowl. In a separate pan, heat the heavy cream over medium heat until just bubbling, then pour it over the semisweet chips and stir until combined. Keep warm over a double boiler. Once the brownies are cool, cut them into 30 small squares. Place a TBSP of ice cream on one square, and then top with another brownie. Continue to do this until you have made 15 brownie bites. Place them back on the sheet pan and drizzle with the chocolate ganache. Place in the freezer covered in plastic wrap until firm, about 1 hour!
