Brown Butter Cornmeal Sandies

Browned butter has a nutty, sweet taste, almost like caramel--perfect for these light sugar cookies.
 

Ingredients

  • 1 cup butter, browned and cooled back to solid
  • 1/4 cup sugar
  • 1 1/2 tsp vanilla
  • 1 1/2 cup all purpose flour
  • 1/2 cup yellow cornmeal
  • 1/4 tsp salt
  • Sugar

Method

Preheat oven to 350 degrees. Line baking sheets with parchment paper and set aside. With an electric mixer, beat butter until soft. Beat in sugar and vanilla. Combine flour cornmeal and salt then mix until well combined. Using a 1 inch scoop, place dough onto prepared cookie sheet. Flatten lightly with bottom of a drinking glass that has been dipped into sugar. Bake 10-12 minutes, or until edges are a bit golden. Let sit on cookie sheet 2 minutes, then remove whole parchment sheet with cookies, very carefully, to a cooling rack. Do not disturb until completely cooled as the cookies are very delicate. Place a new parchment paper onto cookie sheet and continue with next batch.
