Brenda's Biscotti

This biscotti is great with coffee or tea, but it also makes a great personal gift for the holidays.
 

Ingredients

  • 1/2 cup unsalted butter, at room temp.
  • 3/4 cup sugar
  • 2 large eggs, at room temp.
  • 1 teaspoon vanilla
  • 2 cup of flour
  • 1 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 8 oz chocolate chips
  • 8 oz semi-sweet chocolate

Method

Pre-heat oven to 325 degrees. Beat butter with sugar, until light and fluffy and well incorporated. Beat in eggs and vanilla. In a separate bowl, mix in flour, baking soda and salt. Gradually, mix dry mixture into wet mixture, until well incorporated. Do not over mix biscotti batter. Divide the dough into two. Place each portion of dough onto a cookie sheet with parchment paper. Shape the dough into a flattened portion, 12 inches X 4 inches. Bake for 30 minutes or until slightly browned around the edges. Remove from oven and let cool for 10-15 minutes. Once cooled, cut each flattened portion with a knife. Biscotti can be cut on cookie sheet. Make 3/4 inch diagonal cuts into the flattened biscotti. After sectioning the biscotti, turn the slices upright and bake for another 15 minutes. Let biscotti cool to room temperature and prepare to dip biscotti into melted semi-sweet chocolate. Melt the semi-sweet chocolate and hand dip the cooled biscotti. Dip 1/2 of the biscotti (at an angle) into the chocolate and then lay on tray with waxed paper. Let biscotti cool in fridge until chocolate is completely set.
