Big Peanut Butter Cookies

Be careful not to overbake these giant cookies or they'll be hard, not chewy. Serve them warm from the oven with a glass of cold milk for a great after-school snack.
Ingredients
- 1/2 cup vegetable shortening
- 1/2 cup peanut butter
- 1 1/4 cups packed dark brown sugar
- 1 egg
- 1 tsp. vanilla
- 3/4 tsp. salt
- 1 1/2 cups all-purpose flour
- 2 tsp. baking soda

Preheat oven to 375 degrees. Beat shortening, peanut butter, brown sugar, egg, vanilla, and salt together in large bowl until smooth. In a separate bowl combine the flour and baking soda. Slowly add the dry mixture to the wet mixture while beating. Shape into balls using 3 tablespoons dough. Press to 1/2-inch thickness on an ungreased baking sheet. Bake about 18 to 20 minutes or until edges are lightly brown.
