Apple Pie Bars

A mixture of chopped apples, sugar, flour, cinnamon and nutmeg is spread between a 2-crust pastry in a large rectangular pan, then baked and drizzled with a powdered sugar icing.
 

Ingredients

  • CRUST:
  • 4 cups flour
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 cup shortening
  • 4 egg yolks, beaten
  • 2 Tbsp lemon juice
  • 1/2 cup cold water
  • FILLING:
  • 7 cups finely chopped peeled apples
  • 2 cups sugar
  • 1/4 cup flour
  • 2 tsp ground cinnamon
  • Dash of ground nutmeg
  • GLAZE:
  • 1 cup confectioners' sugar
  • 1 Tb. lemon juice
  • Milk

Method

In a large bowl, combine the flour, salt, and baking powder. Cut in the shortening until mixture resembles coarse crumbs. In a small bowl, whisk the egg yolks, lemon juice and water. Gradually add to the flour mixture, tossing with a fork until dough forms a ball. Add 1 or 2 Tbsp. additional water, if necessary to moisten. Divide dough in half. Refrigerate for 30 minutes. Roll out one portion of dough between two large sheets of waxed paper into a 17x12-inch rectangle. Transfer to an ungreased 15x10x1-inch baking pan. Press pastry onto the bottom and up the sides of pan; trim pastry even with top edge. In a bowl, toss the apples, sugar, flour, cinnamon and nutmeg, spread over crust. Roll out remaining pastry as above to fit top of pan; place over filling. Trim edges; brush edges between the two sheets of pastry with water or milk; pinch to seal. Cut slits in top. Bake at 375 for 45-50 minutes or until golden brown. Cool on a wire rack. For glaze, combine sugar and lemon juice; add enough milk to make of drizzling consistency. Drizzle over bars before cutting.
