Anise Biscotti

This biscotti recipe cuts the biscotti in a shallow baking pan rather than slicing baked logs. Anise is the flavoring here.
 

Ingredients

  • 2 1/2 cups unbleached flour
  • 2 T. anise seeds
  • 3/4 tsp. baking powder
  • 3 Eggs
  • 3/4 c. cooking oil
  • 3/4 c. granulated sugar
  • 1 tsp. vanilla

Method

Preheat oven to 350 degrees. Mix dry ingredients; flour, anise seeds, baking powder. Blend eggs, oil, sugar and vanilla in a large mixing bowl with electric mixer. Add blended mixture to dry mixture and hand mix all ingredients together well. Spread evenly in a 15 x 10 x 1 ungreased baking pan. Bake for approximately 15 - 20 minutes until golden brown. Cut into 1 inch by 5 inch biscotti fingers and turn to one side (not top or bottom) and re-place in warm (not on) oven to allow for crisping to occur.

 

Notes: 1. This is a tasty and perfect compliment to tea or coffee for breakfast or lunch. 2. Burying vanilla beans in your sugar overnight gives the sugar a vanilla flavor as well and enhances the taste of the biscotti.
