Almond Roca Peanut Butter Bars

These rich almond and peanut butter bars are the perfect accompaniment for a hot cup of coffee.
Ingredients
- 1/4 cup peanut butter
- 1 stick butter
- 1/2 cup white granulated sugar
- 1/2 cup brown sugar
- 2 large eggs
- 1/2 cup all purpose flour
- 1/2 tsp vanilla
- 1/4 tsp salt
- 1/2 cup almonds, chopped
- 10 almond roca candies, finely chopped

Method
Preheat oven to 350 degrees. Melt peanut butter over hot water (i.e. double boiler). Grease 8 inch square pan. Cream butter until soft. Gradually add in sugar, mixing as you go. Add eggs, one egg at a time, mixing after each addition. Sift in flour and salt. Mix until fully incorporated. Mix in peanut butter and vanilla. Add almonds and mix again. Pour into greased pan and bake for 25 to 30 minutes. Don't overbake. Top should be soft to the touch. Spread almond roca evenly over top and let bars cool in pan. Cut into 16 squares.
Notes: Optional: Drizzle caramel sauce and chocolate sauce over top before cutting into squares.
