Almond Madeleines

Madelines are a classic almond flavored cake--this version bakes in cupcake papers rather than the traditional shell shaped pan.Ingredients
- 1 stick unsalted butter, softened
- 1 1/2 cups sugar
- 2 cups flour
- 1 tsp baking soda
- 1 tsp baking powder
- 1/2 tsp salt
- 1 cup buttermilk
- 1 tbsp fresh lemon juice
- Zest of 1 lemon
- 1 tsp almond extract
- 1 large egg
- 1/4 cup superfine sugar for dusting
- 1/2 cup sliced almonds

Method
Combine flour, baking soda, baking powder and salt the set aside. Cream butter and sugar, in an electric mixer, until creamy, about five minutes. Mix buttermilk with egg and fresh lemon juice, then add to butter mixture. Beat together about 3 minutes, add almond extract, and lemon zest. With mixer on low speed, add flour and mix, then pour batter into muffin pan filled with cupcake holders. Fill to about 3/4 and sprinkle with sugar and sliced almonds. Bake in 350 degree oven about 25 minutes or until nice and golden. Remove from oven and place on a wire rack to cool.
