Alex's Favorite Brownies

These brownies are made extra-special with bananas, coffee, maple syrup, peanut butter and hi-fiber cereal.
Ingredients
- 1 15-oz. package brownie mix with fudge packet
- 1/3 cup mashed banana
- 3 Tbsp. cold extra-strength coffee
- 1 egg
- 1 cup tiny marshmallows
- 1/3 cup maple syrup
- 2 Tbsp. peanut butter
- 2 Tbsp. margarine
- 1 1/2 tsp. vanilla
- 1 cup semisweet chocolate pieces
- 1 1/2 cups rice and wheat cereal flakes

Grease and flour an 8x8-inch or 9x9-inch baking pan; set pan aside. Saving the fudge pouch for later, stir together the brownie mix, banana, coffee, and egg. Transfer batter to prepared baking pan. Bake in a 350 degree oven for 30 to 35 minutes. Remove from oven and gently spread reserved fudge pouch over the brownies; sprinkle evenly with marshmallows. Return to oven for 2 to 3 minutes or until marshmallows are soft. Meanwhile, in a medium saucepan combine maple syrup, peanut butter, margarine, vanilla, and chocolate pieces over medium heat; stir until smooth. Stir in cereal flakes. Pour cereal mixture over marshmallows. Cool on a wire rack. Refrigerate until set.
Notes: If I don't have any leftover coffee, I bring the water to a boil in the microwave and dissolve about 2 Tbsp of instant coffee into it and let it cool. I like the texture of the Optimum cereal, but if you like it a little lighter, use the Special K or even Rice Krispies. Also, I like to use the 60% chocolate chips.
